Easy Chicken Chow Mein

I remember eating this meal at home with my parents and three older brothers. Back then, I had to fight for extra water chestnuts. These days I eat this at home with my husband and three little boys. They don’t fight for the water chestnuts, so I get them all to myself and I LOVE them in this easy recipe. 

This is easy to make, it’s quick, and it’s made with ingredients that you probably have in your pantry right now. 


Chicken Chow Mein

1/2 stick butter

Cooked chicken, cut up into bite sized pieces

1 Red pepper, chopped

2 stalks Celery, chopped

1 onion, chopped

1 can water chestnuts

Carrots, chopped

1 c chicken broth

2 T flour or cornstarch

Soy sauce

Rice, cooked

1. Melt butter in pan

2. Sauté carrots, onion, celery, pepper until tender

3. Stir flour/cornstarch into broth and set aside

4. Add chicken, water chestnuts, a little soy sauce to taste, and flour/broth mixture. Heat until thickened. 

5. Serve with cooked rice.
