4 Easy Meals with Leftovers

I am not a “leftover” type of girl. The only leftover dinner I will eat is spaghetti. And I’m not the type of girl who can eat only one plate of spaghetti at a meal…and it gets dangerous when there’s bread involved. 

Because I can’t serve spaghetti for every meal (although I’ll admit there have been weeks when I’ve served it more than once) I have to do something with the leftover food each week. My darling hubs takes some for lunch (which saves $$) and I’ve determined to use leftovers (to save $$).

So, I want to share 4 of our favorite meals (2 original and 2 with the leftovers) for you to enjoy! These have helped fill up our weekly meal calendar and stick to a budget.

1.) Mexican Chicken

Preheat oven to 350*

Layer chicken breasts, black beans, and salsa in a greased pan.

Cover and bake for 1 hour.

Top with cheese during last 5 minutes if desired.

OR – remove chicken, shred with hand mixer (so easy but also kinda messy!).

We eat this with rice or tortilla chips.

2.) Leftover Mexican Chicken Meal – Chimichangas or Quesadillas

Preheat oven to 425*

Top tortilla with leftover chicken, refried beans, cheese, guacamole, sour cream, rice, etc.

Roll into burrito, brush with olive oil and bake for 20-25 minutes.

OR Fold over into quesadilla, brush with olive oil and bake for 20-25 minutes.

Top with salsa, cheese, etc.

**When it comes to nachos, we top them with anything – left over BBQ meat, add some cheese, jalapeños, etc. I keep a bag of tortillas chips around (scoops, of course) to throw together an easy meal at the end of those crazy, hectic days when I’ve forgotten to make dinner until (gulp) 30 minutes before dinner time. 😉


3.) Chicken/Turkey Gyros

This recipe is from TASTE OF HOME. I didn’t have turkey, so I used chicken breasts.

Preheat over to 350*

Drizzle chicken breasts with olive oil, sprinkle with salt, pepper, garlic powder, and Greek seasoning.

Bake for one hour.

Slice into bite-sized pieces.

4.) Leftover GYRO meat meal – Chicken and Bean Soup in Slow Cooker

This recipe is from TASTE of HOME, too. I used the leftover Gyro chicken meat for this. It was DELISH!
